One of the things I love about summer, is that my body is always craving salads.  According to Chinese medicine, when the weather gets hot, one of the best ways to balance the heat is to consume cooling foods.  Sounds simple – doesn’t it?  When we ignore what our body wants and needs,  this is when sickness can occur.  So bring on the cooling foods to stay healthy and energized: vegetable salads, fruit salads, chilled soups, cold pressed juices, fresh mint, fresh cilantro, raw cabbages, coconut water – all of these things will help keep your body in balance for the season.

It is easy to get stuck in what I call a “salad rut”, where you make the same salad night after night.  Here are 3 new summer recipes to help bring motivation back into your kitchen.  Enjoy 🙂

Cabbage Salad
2 cups chopped red cabbage
2 cups copped green cabbage
(Sometimes you can get already washed and chopped raw cabbage in the produce section of your grocery store.)
1 shredded carrot
1 cup of peas (cooked or raw)
1/2 tablespoon of raw honey
2 tablespoons of TOASTED sesame oil (from Trader Joe’s Whole Foods, local health food store or sometimes local grocery store)
2 tablespoons of RICE vinegar


Tuna over Greens
4 cups greens of choice (Romaine is nice for this)
4 thinly sliced radishes
2 ribs of celery thinly sliced
1 tablespoon of capers
1 can of white meat tuna – drained
1 juicy lemon – juiced
EVOO (extra virgin olive oil)
sea salt and black pepper to taste


Guilt-Free Ice Cream
1 cup homemade or from a carton, unsweetened coconut milk
1 & 1/4 cups frozen strawberries
1/4 cup frozen raspberries
1/4 cup PURE maple syrup
1 teaspoon PURE vanilla extract
Blend together in a food processor until smooth (could probably work in a blender)
Freeze in a BPA free plastic container for 1 hour.  After more than 1 hour it becomes ‘rock’ hard.  Just let it sit out about 10 minutes to soften.
